
6/8/25 – I am excited. The first honey harvest is done, and it looks like another is right around the corner! I have started bottling and have honey back in the hut, and as soon as I replace my stolen sign holder I will get my local honey sign back out to help you find me. I will also start selling at markets (Dexter, Chelsea and Whitmore Lake) and I have updated my market calendar.
This years first honey is much more flavorful than any spring honey I have had before. I suspect it is due to the unusually large fall honey crop, which I left with the bees for the winter. As a result, they finished winter with more honey left in the hive than usual. As the bees start raising new bees in the spring, they move any honey stored in the bee raising space to make room for the babies. I also occasionally shift honey up to make room for the queen to lay eggs). Because of that, some of that fall honey ended up in the honey supers. Therefore, although most of the honey I just collected was made this spring, there is some fall honey mixed in and fall honey is quite strong tasting. As a result, this spring honey has a lot of flavor. I really like it. I hope you will love it, but if you prefer a very mild honey, you might want to wait until I do the next harvest, which looks like it could be in another 10-14 days. For my creamed honey lovers, I do think this honey has the right properties to cream well, so I will get some creamed honey started, and it should be ready in a couple of weeks!

If you are wondering about the ‘birds’ I also raise free range chickens and have added a handful of ducks, who are happily occupying my neighbors pond (with their permission, of course!) At this time I have enough established chicken eggs customers to use all the chicken eggs I am producing, but I often have some duck eggs available, so let me know if you can use those. In addition, I do occasionally have turn over in my regular egg customers, so if you are interested in becoming a chicken egg customer, send me a message. I will add you to my list, and let you know if/when I can support providing eggs for you.
